One way for me to relax is to cook. So this summer I have checked out some excellent books from the library and tried new recipes.  The biggest problem for me is going out and buying the ingredients.  That stresses me out because I will go all over the market trying to find the right vegetable or spice.  Despite the stress of shopping I have found some easy recipes that you can enjoy before the summer ends.

Red Snapper with Mango Salsa (for 2)

  • 250 grams (or about .5 lbs) of Red Snapper
  • Olive Oil
  • Mango
  • Red Onion
  • Chilies (optional but it gives the salsa a nice heat)
  • 1 large lime
  • Some cilantro to taste (optional)
  • Salt
  • Pepper
  1. Squeeze the lime juice out of the lime. Then grate the zest off the entire lime.  And set aside.
  2. Cut up the Mango into nice cubes and chop up the red onion and chilies and cilantro.  
  3. Heat oil.  Salt and pepper fish to taste and fry fish trying to flip only once.  It is about 3 min. on each side.  I like it nice and brown and crispy on the outside.  Don’t worry if you leave little bits in the pan. Set the fish on plates. 
  4. Next pour in lime juice and lemon zest and scrape the little fish bits.  Bring to a simmer.
  5. Put in the rest of the ingredients.   Allow the mango to get soft.  About four mins. 
  6. Put the salsa on the fish and you are ready to eat.

This is the best fish recipe I can make so far.  It is easy and the Red Snapper and Mango combination go well together.  It is so easy it is not even funny.  The longest time you will spend is chopping up the veggies. 

We recommend the Longhouse Fishmonger on Dunbar.  They staff is so nice there and it is close to our house.  We would love to hear other fish places around town.  I am trying to learn how to cook fish and other seafood.

Still to come an easy and tastey Scallop recipe, but it is not too healthy.  I will post that one soon.

In El salvador the civil war may be history

but peace is not always present.
